Stuffed Portabella Mushrooms - LOW CARB!!
These were so yummy!!
Recipe:
1/2 chopped onion
1/2 chopped red bell pepper
2 cloves garlic, minced (I put mine through my Pampered Chef Garlic Press)
1 tablespoon of EVOO
salt
pepper
thyme
1 cup mozzarella cheese
parmesian cheese
2-3 large portabella mushroom caps
Chop onion, pepper and mince garlic. Saute until soft and then season to your taste with the salt, pepper & thyme. "Stuff" the mushroom caps and sprinkle with cheese. Bake at 400 degrees for 15-20 minutes.
I couldn't believe how good these were!
