Chicken-Vegetable Soup - Low-Carb Style
So I mentioned a few days ago that I am trying my best to change to a low-carb lifestyle. When you're a carb-a-holic, it's hard, but finding different and tasty recipes does the trick!
Chicken-Veggie Soup (http://www.the17daydiet.com/)
4 baked chicken breasts, diced into small pieces
1 1/2 cups of cabbage, chopped
1 large carrot, chopped (I peel the carrot & I don't chop to little pieces)
1 cup chopped okra (so, if you don't like okra, leave it out. Not everyone is going to like it.)
1 large onion, chopped
2 large celery stalks with leaves, chopped
1 15 oz can of crushed tomatoes (I used diced, zesty jalepano)
1 14 oz can fat-free chicken broth
salt & pepper to taste
Place all ingrediants except chicken into a large pot and simmer for 1 hour or until vegatables are soft. Add in chicken & heat throughly. Enjoy!
It takes only a few minutes to prepare and it's delish!
Did you know that okra originated in West Africa? I sure didn't!
The most popular dishes that incorporate okra are:
Frango com quiabo, (chicken with okra), a Brazilian dish;
Gumbo, thorugh-out the gulf coast States and South Carolina Lowcountry;
Breaded & deep fried in the Southern US;
and is the part of the national dish of Barbados.
Did you know that, that "goo" you get from cooking okra contains fiber and is used as a thickener in soups!? You learn something new everyday, don't you!?
You can find it pickled as well.
