London Broil ~a la Amy~ & Steamed Green Beans
So. I sometimes come up with my own recipes.
I have a tendency to do that when I can't figure out what I want to eat or when I can't find a recipe I like.
SO TONIGHT...
The first thing I did was cut up a portabella mushroom cap & a medium onion.
Put it in a pan with some EVOO and garlic.
I let them soften a bit with the heat & oil.
I then add, chicken broth, chardonnay & a touch of lemon juice & salt & pepper to taste.
I let the mushrooms & onion cook down until soft.
Looks good doesn't it!?!?
Oh, if you are worried that I used the same cutting board for the veggies that I did for the meat, well, I am smarter then you think! I have 4 cutting boards so I pulled out another cutting board for the beef!
Anyway, season a steak anyway you like, salt, pepper, horseradish, whatever you like. Here's my way...
Salt, Pepper, Cayenne Pepper, McCormick's Smokehouse Maple Seasoning, Cinnamon,

YES
Cinnamon gives it a bit of a sweet smoky flavor.
Cinnamon has a thermogenic (heats the body) property in it that is good for arthritis and other health issues as well as speeding up your metabolism to help burn fat.
I took the beef out of the package & put it on a cutting board.
I then season the beef with the spices & either grill it or put it in a grill pan on the stove.
Since it is cold & rainy today, in the grill pan it went.
Cook to whatever temperature you desire.
I prefer medium-rare to medium. yum
I then let it rest for 10 minutes before cutting into the meat. Keeps the juices inside to keep it moist. If you cut it too soon, all the juice runs out & your left with a dry steak. Nothing is worse then a dry steak!
While the beef was cooking, searing, getting all yummy, I pulled out the green beans.
I snapped the beans.
Oh so many memories flooded into my mind!
Sitting on the back patio of my Granddad K's house & helping him snap the beans fresh from his garden on Oldewood Drive.
So. I put some of the mushroom & onion mixture on my plate.
Sliced the beef & put it on my plate.
Put the green beans on my plate.
Dinner.
Going, going
gone!
I did all this before church tonight, cleaned it up & started the dishwasher!

I have so many spices in my collection, it is sometimes hard to choose what I want on my steaks.
Oh & I have put nutmeg on my steak before!
I've put it in Lasagna too!

So ... You don't marinate or otherwise tenderize it?

ReplyDeleteLondon broil is one of the more tender cuts of beef. Sometimes I do marinate it in Italian dressing or a combination of Worcestershire, Dijon mustard & white wine. In saving time, I usually just throw on some spices & grill it up!
