Low Carb Chicken Fajitas - without the Tortilla?

Seriously, you can't have fajitas without the tortilla...   well, yes you can!  I did!

Ok, so just call it Chicken with peppers & onions if you must!  But to me it's Chicken Fajitas!


For the last week, I have been trying to do low carb as an eating style.  It's hard when you LOVE SWEETS, BREAD and anything not good for you!

When it comes to food, I have to find YUMMY recipes to spark my interest and keep me coming back for more because I get bored with the same ol thing, over and over again.

Anyway...   the recipe is as follows:

Chicken Fajitas
2 chicken breasts, cut into 1/2 inch strips
2 bell peppers, cut into strips
1/4 red onion in 1/2 round strips
2 cloves garlic, minced (I put mine through my trusty Pampered Chef Garlic Press)
1/4 cup chopped cilantro
1/4 tsp salt
1/4 tsp pepper
1 tsp cumin
1 tsp chili powder
1/8 tsp cayenne pepper
1 T EVOO

Chop veggies and set aside.

Cut chicken into strips

Combine all dry ingredients and EVOO and put over chicken; toss to coat chicken.

Cook chicken until almost cooked through.  Add veggies and cook until chicken is completely cooked through.  Add chopped cilantro.

When they were done, I put about 3 tablespoons of cheddar cheese over them and dug in!

They were so good!  When I have fajitas, I NEVER have left-overs!
